Stuffed peppers with pulled pork

Ingredients for 2 servings:

  • 2 medium-sized bell peppers
  • 1 pack of pulled pork, approx. 450 g
  • 100 g Emmental cheese, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 15 minutes

Low-carb

Cook the pulled pork according to the package instructions. Usually about 30-45 minutes. Split the peppers in half, remove the cores and white membranes. When the meat is done, shred it with two forks and simply stuff the pepper halves, about 80-100g per half. Sprinkle the grated Emmental cheese over the meat, about 25g per stuffed pepper. Place it in the still-warm oven and bake for 20 minutes at 180°C. By my calculations, that would be about 8 carbohydrates per serving.
