Stuffed piccata with garlic spaghetti

Ingredients for 2 servings:

  • 2 chicken breasts
  • 1 ball of mozzarella
  • 8 basil leaves
  • 2 eggs
  • Parmesan, grated
  • 200g spaghetti
  • 5 cloves garlic
  • Oil, for frying
  • olive oil
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Clean the chicken breasts, carefully slice them into schnitzels, top each with 2 basil leaves, then add 2 thin slices of mozzarella, then 2 more basil leaves, fold them together, and season both sides with salt and pepper. Beat the 2 eggs. Add the Parmesan cheese and toss the chicken breasts in it. Fry in oil until golden brown on both sides. Cook the spaghetti in plenty of salted water until al dente. Lightly sauté the crushed garlic in olive oil, add the spaghetti, toss to coat, and serve with the stuffed chicken breast.
