Ingredients for 4 servings:

  • 4 large potatoes
  • 200 g cream cheese
  • 100g Gorgonzola
  • 100 g cooked ham
  • 1 onion(s)
  • 1 tbsp chives
  • 2 egg yolks
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Wash the unpeeled potatoes thoroughly and boil for about 25 minutes. Meanwhile, prepare the filling. Combine the cream cheese and Gorgonzola, chives, chopped onion, and finely diced ham in a bowl and stir until combined. Finally, vigorously stir in the egg yolk. Halve the cooked potatoes and scoop out some of the insides. Press the removed potato mixture with a fork, add to the cheese mixture, and mix well. Season with salt and pepper. Preheat the oven to 200°C (top/bottom heat). Place the scooped-out potato halves on a greased baking sheet or one lined with baking paper/a baking mat, fill with the cheese and potato mixture, and bake in the hot oven for 10-15 minutes.
