Stuffed Sweet Potato
The perfect stuffed sweet potato recipe with a picture and simple step-by-step instructions.
- 2 Pc. Sweet potatoes
- 0,5 Pc. Red peppers
- 0,5 Pc. Yellow peppers
- 0,5 Pc. Green peppers
- 0,5 Pc. Onion
- 2 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 tsp Pepper
- Oil
- 300 g Chicken breast fillet
- 3 tbsp Grated mozzarella
- 1 Pc. Rosemary sprig
- Prick the sweet potatoes lengthways with a fork and place in the microwave for 5 minutes.
- Meanwhile, cut the peppers and onions into strips.
- Cut the sweet potatoes in half along the line perforated with the fork and hollow out the halves a little.
- Mix the spices.
- Pour some oil over the sweet potatoes and sprinkle with a little spice mixture. Rub both into the inside of the potatoes.
- Pour some of the spice mixture over the peppers and onions and mix well.
- Place the sweet potato halves next to the vegetables on a baking sheet lined with baking paper. Place the washed and dabbed dry chicken breast on the vegetables and brush with a little oil and spice mixture.
- Bake everything together at 200 degrees for 20 minutes.
- After cooking, tear the chicken into pieces with a fork and mix with the vegetables. Spread this mixture on the sweet potato halves.
- Spread a tablespoon of the grated mozzarella cheese on each of the potatoes and bake in the oven for 5 minutes. Garnish with a little rosemary.
