Stuffed Sweet Potato

The perfect stuffed sweet potato recipe with a picture and simple step-by-step instructions.

  • 2 Pc. Sweet potatoes
  • 0,5 Pc. Red peppers
  • 0,5 Pc. Yellow peppers
  • 0,5 Pc. Green peppers
  • 0,5 Pc. Onion
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • Oil
  • 300 g Chicken breast fillet
  • 3 tbsp Grated mozzarella
  • 1 Pc. Rosemary sprig
  1. Prick the sweet potatoes lengthways with a fork and place in the microwave for 5 minutes.
  2. Meanwhile, cut the peppers and onions into strips.
  3. Cut the sweet potatoes in half along the line perforated with the fork and hollow out the halves a little.
  4. Mix the spices.
  5. Pour some oil over the sweet potatoes and sprinkle with a little spice mixture. Rub both into the inside of the potatoes.
  6. Pour some of the spice mixture over the peppers and onions and mix well.
  7. Place the sweet potato halves next to the vegetables on a baking sheet lined with baking paper. Place the washed and dabbed dry chicken breast on the vegetables and brush with a little oil and spice mixture.
  8. Bake everything together at 200 degrees for 20 minutes.
  9. After cooking, tear the chicken into pieces with a fork and mix with the vegetables. Spread this mixture on the sweet potato halves.
  10. Spread a tablespoon of the grated mozzarella cheese on each of the potatoes and bake in the oven for 5 minutes. Garnish with a little rosemary.
