Sweet Potato Stuffed from Oven

- 1 size Sweet potatoes
- 150 g Mushrooms brown
- 0,5 Onion
- 1 Clove of garlic
- 2 Spring onions
- Olive oil
- Pepper
- 100 g Creme fraiche Cheese
- Lemon juice
- Grated cheese
- Peel the sweet potatoes, cut in half lengthways and cook in salted water for about 10-15 minutes, drain and allow to evaporate a little.
- Clean the mushrooms and cut into slices, peel the garlic and onion, clean the spring onions and cut into rings.
- Heat some oil in a pan, sauté the onion and garlic.
- Now add the mushrooms and season with a little pepper.
- Hollow out the potato with a spoon, leave one edge and cut the inside with a knife and add to the mushrooms, mix with a little creme fraiche.
- Put the potatoes in a lightly greased casserole dish and add the mushroom mixture, mix the creme fraiche with lemon juice, spring onions and cheese. Pour over the potatoes and put them in the 200 ° C. oven for about 15 minutes
