Sweet Potato Stuffed from Oven

  • 1 size Sweet potatoes
  • 150 g Mushrooms brown
  • 0,5 Onion
  • 1 Clove of garlic
  • 2 Spring onions
  • Olive oil
  • Pepper
  • 100 g Creme fraiche Cheese
  • Lemon juice
  • Grated cheese
  1. Peel the sweet potatoes, cut in half lengthways and cook in salted water for about 10-15 minutes, drain and allow to evaporate a little.
  2. Clean the mushrooms and cut into slices, peel the garlic and onion, clean the spring onions and cut into rings.
  3. Heat some oil in a pan, sauté the onion and garlic.
  4. Now add the mushrooms and season with a little pepper.
  5. Hollow out the potato with a spoon, leave one edge and cut the inside with a knife and add to the mushrooms, mix with a little creme fraiche.
  6. Put the potatoes in a lightly greased casserole dish and add the mushroom mixture, mix the creme fraiche with lemon juice, spring onions and cheese. Pour over the potatoes and put them in the 200 ° C. oven for about 15 minutes
