Stuffed zucchini boats

Ingredients for 2 servings:

  • 2 zucchini, 200 g each
  • 2 m.-large tomato(s)
  • 100 g cooked ham
  • 100 g cheese (Gouda), medium-aged
  • 1 can tomato(s), chunky, 425 g
  • 2 tbsp chives, cut into rolls
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat oven to 180°C fan/convection oven. Wash the zucchini, trim the ends, halve lengthwise, and deseed with a teaspoon. Wash, halve, and deseed the 2 tomatoes. Finely dice the tomatoes, cooked ham, and Gouda cheese and place in a bowl. Add 3 tablespoons of canned tomatoes and the chives to the bowl and mix well. Season the mixture with salt and pepper and fill the hollowed-out zucchini halves. Transfer the remaining canned tomatoes to a baking dish and place the zucchini boats on top. Bake in the preheated oven for about 25 minutes.
