Fresh Orange-white-green Summer Salad (Claudelle Deckert)

The perfect fresh orange-white-green summer salad (claudelle deckert) recipe with a picture and simple step-by-step instructions.

dressing

  • 3 tbsp White balsamic vinegar
  • 4 tbsp Freshly squeezed orange juice
  • 4 tbsp Olive oil
  • 4 tbsp Oil
  • 3 tsp Honey
  • 1 tsp Grated ginger
  • 1 pinch Salt
  • 1 pinch Black pepper

salad

  • 2 bunch Arugula
  • 3 piece Spring onions
  • 1 piece Mango
  • 5 piece Buffalo mozzarella
  • 2 tbsp Basil leaves

dressing

  1. For the dressing, mix all ingredients in a sealable mug or glass (e.g. empty jam jar) and then shake vigorously. Season with salt and pepper vigorously.

  1. For the salad, wash the rocket and spin dry, then cut off the long hard stalks. Wash the spring onions in the same way and then cut into fine, diagonal rings.
  1. Peel the mango, cut from the stone and then cut into bite-sized pieces. Halve the individual mozzarella balls and cut into slices.
  1. Mix the rocket with a little dressing, then serve the rocket in equal portions on 5 plates.
  1. Mix a few basil leaves into the rocket. Arrange nicely with the mango pieces, the mozzarella slices and the spring onions. Finally, carefully pour a little more dressing over the entire salad.
