Ingredients for 4 servings:
- 500 g watermelon(s)
- 200 g feta cheese
- 50 g pine nuts
- 10 mint leaves
- 1 lemon(s), juice
- 2 tbsp olive oil
- salt and pepper

Roast the pine nuts in a pan without fat. Finely chop the mint. Dice the watermelon, toss it with the pine nuts and mint in a bowl, and season with lemon juice, olive oil, salt, and pepper. Serve and crumble the feta cheese over the top. It tastes delicious as a side dish with steak or as a summery main course with fresh baguette. It’s always a hit at our buffets.
