Summery, Fruity Puy Lentil Salad

  • 120 g Puy lentils
  • 150 g Watermelon
  • 2 Mountain peaches
  • 100 g Strawberries
  • 1 bunch Flat leaf parsley
  • 150 g Wild tomatoes
  • 300 g Chicken breast
  • 1 tbsp Strength
  • 4 tbsp Soy sauce
  • Oil

dressing

  • 70 g Strawberries
  • 2 Garlic cloves
  • 1 tbsp Dijon mustard
  • 70 ml Olive oil
  • Salt
  • Black pepper from the mill

  1. Rinse the lentils under cold running water and then put them in a saucepan, add about 6 times as much water and bring to the boil. When the lentils are boiling, place on a low flame, put the lid on and simmer for 15 minutes, then pour off, drain and let cool and place in a salad bowl.
  2. Mix the soy sauce with the starch, cut the chicken breast into cubes, pour the soy mixture over it, work it in well and then fry it all over in a hot pan with a little oil, leave to cool.
  3. Cut the watermelon into bite-sized cubes, cut the strawberries into slices and also cut the peaches into slices and pour them over the lentils. Also cut the wild tomatoes into slices, chop the parsley and pour both over the lentils.

Dressing and finishing

  1. Put all the ingredients for the dressing in a tall container and puree to a creamy dressing with the help of a stick. Make sure that it is properly salted and peppered.
  2. Now add the fried chicken breast to the lentils, pour the dressing over it, mix everything well and then serve.
