Ingredients for 4 servings:

  • 4 bagels
  • 30 ml olive oil
  • 8 eggs
  • 60 g cheese (e.g. Emmental), grated
  • salt and pepper
  • some chives

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 12 minutes

Bagel with fried egg and cheese

Preheat the oven to 150°C. Cut the bagels in half and fry them cut-side down in a pan with olive oil. At the same time, crack an egg into each half. Let it sit in the pan over low heat for 2-3 minutes, until the egg is set. Then place the bagels on a baking sheet lined with parchment paper and sprinkle the cheese over the bagels. Bake for another 2-3 minutes, until the egg is cooked through and the cheese and bagels are lightly browned. Serve with fruit (breakfast) or salad (lunch).
