Sunken apple cake with nuts

Ingredients for 1 servings:

  • 200 g butter, room temperature
  • 220 g sugar
  • 1 tbsp vanilla sugar
  • 4 m.-sized eggs
  • 200 g flour, smooth
  • 1 tsp, leveled baking powder
  • ½ lemon(s), untreated, grated zest
  • 600 g apples, sour
  • 50 g hazelnuts, walnuts or almond flakes
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Preheat oven to 180-200°C. Grease a springform pan. I like to add ground nuts or breadcrumbs. Cream the butter until light and fluffy. Add all but 2 tablespoons of the sugar and the vanilla sugar, and beat everything on high for about 3-5 minutes. Gradually add the eggs, continuing to beat until fluffy. Stir in the flour and baking powder. Pour the batter into the pan and level the surface. Peel, quarter, and core the apples. Cut each quarter lengthwise into a circle and place them in the batter. Sprinkle with the remaining sugar. Roughly chop the nuts and sprinkle over the top. Bake the cake in a hot oven on the middle rack for about 1 hour until golden brown.
