Ingredients for 4 servings:
- 500 g pasta
- 2 Pepper
- 1 onion(s)
- 15 cherry tomatoes
- 1 can of corn
- 350 ml tomato juice
- 250 ml water
- 1 tbsp cream cheese
- 1 tbsp tomato paste
- 200 g sour cream
- 1 tsp salt and pepper
- 1 tsp lemon juice
- 2 eggs
- 250 g cheese (Gouda or butter cheese)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the pasta in plenty of salted water until al dente. Sauté the sliced onion and the sliced peppers in a little butter for 2-3 minutes, then deglaze with the tomato juice and water. After simmering for 5 minutes, stir in the cream cheese, tomato paste, corn, spices, and lemon juice, and simmer for another 5 minutes. Place the drained pasta in a baking dish. Quarter the cherry tomatoes and add them. Pour the sauce over the pasta and mix everything together. Whisk the sour cream with the eggs and spread evenly over the pasta. Bake in a preheated oven at 200°C for 10 minutes, remove from the oven, sprinkle with the cheese, and bake for another 10 minutes.
