Super Delicious Avocado Pasta

- 500 g Fresh pasta – narrow ribbon noodles or similar
- 2 piece Ripe avocados
- 2 piece Tomatoes
- 0,5 bunch Spring onions
- 0,5 bunch Fresh coriander
- 1 piece Clove of garlic
- 0,5 piece Red chilli without the kernels
- Juice from one lemon approx 2-3 tablespoons
- Olive oil
- Salt and pepper
- 1 pinch Ground coriander
- Buffalo mozzarella balls
- Add salt water for the pasta and bring to the boil.
- Meanwhile, wash the tomatoes and spring onions and cut them into small pieces
- Press the garlic
- Wash 1 / 2 chilli peppers, remove seeds and cut into fine strips
- Wash the fresh coriander, pluck the leaves and chop finely
- Halve the avocados, remove the stone and remove the pulp with a spoon. Then mash with a fork and immediately mix in the lemon juice
- Mix everything together with a good dash of olive oil
- Boil the pasta in salted water. Drain and transfer to a warmed bowl or large warm pan
