Super delicious mandarin orange yogurt cake

Ingredients for 1 servings:

  • 1 can of tangerine(s)
  • 2 m.-sized eggs
  • 75 ml vegetable oil
  • 75 g yogurt (whole milk yogurt)
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 150 g flour
  • 1 tsp baking powder
  • Butter for the mold
  • cream, whipped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Drain the mandarins. Then grease a 26 cm springform pan with a little butter. Now we prepare an all-in-one batter: Combine the eggs, oil, yogurt, sugar, and vanilla sugar in a mixing bowl and mix briefly with a hand mixer. Mix the baking powder and flour and add to the remaining batter. Mix everything immediately. Then spread the batter into the springform pan. Arrange the mandarins in a circle on the batter. Do not press down. Bake in a preheated oven at 180°C to 190°C for approx. 30-35 minutes (mine is done at 180°C after 35 minutes and has a pleasantly light brown color). Let cool and serve with whipped cream.
