Superfood pudding

Ingredients for 2 servings:

  • 3 tsp, heaped chia seeds
  • 3 dates
  • 8 cashews or mixed nuts
  • 2 tbsp muesli (fruit muesli)
  • 1 tsp raw cocoa alternatively baking cocoa
  • Water, approx. 100 ml or milk
  • 1 banana(s)

Instructions

Working time approx. 5 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 5 minutes

Soak all ingredients except the banana in water overnight; I use about 100 ml. Alternatively, you can use milk. The next day, add the banana and puree in a blender on high for 1 minute. Pour the mixture into bowls and enjoy. This pudding is a great healthy breakfast and keeps you full for a long time. It can also be varied endlessly. I sometimes use a pinch of cinnamon or a little vanilla extract instead of cocoa. You can also add other seeds, such as pumpkin seeds, pine nuts, or sunflower seeds. If I’m eating the pudding as a complete meal, I like to use a bit more muesli and, accordingly, more water.
