Vegan Galia Melon Chia Seed Pudding

Ingredients for 2 servings:

  • 300 g Galia melon, pitted and peeled
  • 50 g soy quark (quark alternative)
  • 40 g chia seeds
  • 20 g xylitol (sugar substitute)
  • e.g. plant milk (plant drink) or water

Instructions

Working time approx. 5 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 5 minutes

Cut the Galia melon into pieces and puree with the soy curd. Stir in the Xucker and chia seeds, mixing thoroughly. Let the melon and chia seed pudding swell in the refrigerator for at least 4 hours. Thin the consistency with a little liquid, such as plant-based milk or water, if desired and to your taste.
