- 6 Egg yolk
- 80 g Sugar
- 250 ml Milk
- 250 ml Cream
- 1 Vanilla pod
Apple fritters
- 100 g Flour
- 2 Eggs
- 150 ml Milk
- 3 Apples
- 2 Bananas
- 1 Lemon
- Walnut ice cream
- Vanilla icecream
- Salt
- Cinnamon
- Sugar
- Clarified butter

- Cut the vanilla pod lengthways and scrape out the pulp with the back of a knife. Then stir in egg yolks, sugar and vanilla pulp until smooth.
- Pour milk and cream on top and add the vanilla pod.
- Stir in a water bath over low heat until the sauce thickens. Warning: the sauce must not boil!
Apple fritters
- Mix the flour, eggs, milk and salt with a wooden spoon to form a smooth dough.
- Peel the apples, remove the core and cut the apples into 2 cm thick slices. Then sprinkle them with lemon juice.
- Mix the cinnamon and sugar in a shallow bowl.
- Heat the butter lard in a pan. Then pull the apple slices through the dough and fry them in the clarified butter on both sides over a medium heat.
- Degrease the ready-baked apple slices on kitchen paper to degrease them and then turn them in the cinnamon-sugar mixture.
