Swabian Apple Fritters on Homemade Vanilla Sauce and Walnut Ice Cream (Ute Ohoven)

Ingredients

  • 6 Egg yolk
  • 80 g Sugar
  • 250 ml Milk
  • 250 ml Cream
  • 1 Vanilla pod

Apple fritters

  • 100 g Flour
  • 2 Eggs
  • 150 ml Milk
  • 3 Apples
  • 2 Bananas
  • 1 Lemon
  • Walnut ice cream
  • Vanilla icecream
  • Salt
  • Cinnamon
  • Sugar
  • Clarified butter

Instructions

  • Cut the vanilla pod lengthways and scrape out the pulp with the back of a knife. Then stir in egg yolks, sugar and vanilla pulp until smooth.
  • Pour milk and cream on top and add the vanilla pod.
  • Stir in a water bath over low heat until the sauce thickens. Warning: the sauce must not boil!

Apple fritters

  • Mix the flour, eggs, milk and salt with a wooden spoon to form a smooth dough.
  • Peel the apples, remove the core and cut the apples into 2 cm thick slices. Then sprinkle them with lemon juice.
  • Mix the cinnamon and sugar in a shallow bowl.
  • Heat the butter lard in a pan. Then pull the apple slices through the dough and fry them in the clarified butter on both sides over a medium heat.
  • Degrease the ready-baked apple slices on kitchen paper to degrease them and then turn them in the cinnamon-sugar mixture.
