Swabian gnocchi

Ingredients for 3 servings:

  • 1 pack of gnocchi
  • 1 pack of sauerkraut
  • 200 g bacon (belly bacon)
  • 1 onion(s)
  • Salt
  • pepper
  • vegetable broth

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the bacon and onions and fry in oil. Add the sauerkraut. Season with salt and ground pepper. Deglaze with a cup of vegetable stock and simmer until almost no liquid remains in the pan. Meanwhile, cook the gnocchi in salted water until they float to the surface (do not overcook them). Drain the water and stir the gnocchi into the sauerkraut mixture. Season with salt and pepper, if desired. This recipe is extremely quick, especially if you use diced bacon and pre-cooked gnocchi from the refrigerated section. You can also omit the onions, as the bacon adds a lot of flavor to the dish. Instead of the gnocchi, you can of course use the tried-and-tested Schupfnudeln (dumplings). Simply fry them with the bacon and diced onions until golden brown, then add the sauerkraut and season.
