Swede puree with lime and vanilla

Ingredients for 4 servings:

  • 650 g swede(s)
  • 1 lime(s)
  • 1 vanilla pod(s)
  • 250 ml milk
  • Salt and pepper, white

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and dice the swedes, place them in a pot, and fill halfway with salted water. Bring to a boil, then cover and simmer over medium heat for 15 minutes. Meanwhile, rinse the lime with hot water and zest. Halve the vanilla pod and scrape out the seeds. Boil the seeds and pod in the milk. Then remove the pod and remove the milk from the heat. Drain the swedes, let them evaporate briefly, and mash. Gradually stir in the hot vanilla milk and finally, mix the lime juice into the puree. Season to taste with salt and pepper.
