Moist tangerine cake

Ingredients for 1 servings:

  • 6 eggs, separated
  • 375 g flour
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 250 g sugar
  • 300 g butter, melted
  • 4 can/n tangerines

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Recipe from my mom

Whisk the egg yolks with flour, baking powder, vanilla sugar, and sugar until crumbly. Gradually add the melted butter to the batter. Beat the egg whites until stiff and fold into the batter. Spread the batter on an ungreased(!) roasting pan. Drain the mandarins, reserving the juice. Arrange the mandarins on the batter. Bake the cake at 160°C for 25-30 minutes until golden brown. Drizzle about half of the juice over the warm cake.
