Ingredients for 4 servings:

  • 1 swede(s) (approx. 1 kg)
  • 5 m.-sized potatoes
  • 1 bunch of soup vegetables (carrots, celery, leeks, parsley)
  • 1 onion(s)
  • 1 ½ liters vegetable broth
  • ½ liter of meat broth from the ribs
  • 500 g smoked pork (sharpened ribs)
  • 5 peppercorns
  • 5 grains of allspice
  • 3 bay leaves
  • some butter
  • Parsley, chopped
  • some pepper from the mill
  • 1 ½ liters of water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with smoked pork ribs

Boil the meat with the spices in about 1.5 liters of water until tender. It should fall off the bone easily. Clean the swede, potatoes, vegetables, and onion. Cut the leek and onion into rings, the swede, potatoes, and celery into fairly small cubes, and the carrots into about 0.5 cm thick slices. Prepare the vegetable stock. Sauté the onion and leek in a large pot with a little butter. Add the vegetables and sauté for a few minutes. Then pour in the vegetable stock and cook until tender. Do not overcook! Leave to remain slightly firm to the bite. Add a little of the meat stock if desired. Season with fresh pepper and serve sprinkled with parsley.
