Swede stew with apples and carrots

Ingredients for 6 servings:

  • 600 g boneless pork neck
  • 120 g onion(s)
  • 50 g clarified butter
  • 250 ml wine, white, dry
  • 500 ml vegetable stock
  • 1 bunch of thyme
  • 1,000 g swede(s)
  • 250 g apple, sour
  • 250 g carrot(s)
  • 1 lemon(s), peel + juice
  • curry powder
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the meat and brown in clarified butter, add the diced onions and sauté. Deglaze with wine and vegetable stock and add the thyme sprig. Simmer for about 30 minutes. Peel the swede and apple, dice them, and add to the meat. Add the lemon zest and simmer for another 30 minutes. Season with lemon juice, curry, pepper, and salt. Remove the thyme sprig and lemon zest before serving. Serve with a dollop of whipped cream.
