Swedish rolled roast with horseradish sauce

Ingredients for 4 servings:

  • 1 kg roast pork (rolled roast)
  • Salt
  • pepper
  • 1 apple
  • 1 onion(s)
  • 3 tbsp cranberries
  • 4 tbsp clarified butter
  • 2 tbsp honey
  • 300 g sour cream
  • 200 ml milk
  • 3 tsp horseradish, freshly grated
  • 3 tbsp jelly (cranberry)
  • lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Rub the meat with salt and pepper. Peel the apple and onion, core the apple, and cut into thin slices or rings. Place half of the cranberries on the meat, then arrange the apple and onion on top. Roll up the roast and tie with kitchen string. Preheat the oven to 180°C. Heat the clarified butter and sear the meat well on all sides. Then roast in the oven for about 1 hour and 30 minutes. While it’s cooking, brush the roast with honey and the meat juices. Mix the sour cream, milk, and horseradish with the cranberry jelly and heat in a saucepan. Season the sauce with lemon juice. Remove the roast from the roasting pan, slice, and serve with the sauce. Serve with stuffed dumplings.
