Sweet and sour broccoli salad with cashews

Ingredients for 2 servings:

  • 400 g broccoli
  • 2 onions
  • 2 tbsp sesame seeds
  • 1 tbsp sesame oil
  • 2 handfuls of cashew nuts, roasted
  • 3 tbsp raw cane sugar
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp ketchup
  • ½ tsp Sriracha sauce
  • 1 garlic clove(s), chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegan and quick to prepare

Halve and slice the onions. Sauté in sesame oil in a pan over low heat until softened. Combine the sauce ingredients and add to the onions in the pan. Simmer until the sugar dissolves. If the sauce is too thick, add a little more hot water. Sauté the broccoli until just slightly firm to the bite and mix with the remaining ingredients. Garnish with sesame seeds and cashews and serve warm.
