- 225 g Pineapple pieces from the can
- 1 small Carrot
- 125 g Canned bamboo shoots
- Mie noodles
Batter:
- 125 g Wheat flour type 405
- 1 tbsp Cornstarch
- 1,5 tsp Baking powder
- 1 tbsp Vegetable oil
Sauce:
- 125 g Brown sugar
- 2 tbsp Cornstarch
- 125 ml White wine vinegar
- 3 piece Clove of garlic
- 4 tbsp Tomato paste concentrated three times
- 6 tbsp Pineapple juice
- First we cut the fillet into pieces approx. 1 cm in size.
- Then the onion is peeled, the peppers quartered and pitted, the carrot cleaned. The bamboo shoots are held in a sieve to drain, rinsed and cut in half again. Cut the onions into half rings, thinly strips the bell pepper.
To make dough:
- Strain the flour through a sieve, add cornstarch and baking powder. Add vegetable oil and water as required. You want it to be a thick, smooth dough.
- Heat the oil in a saucepan until it smokes. Then gradually pull the fillet pieces through the dough and fry them in hot oil until crispy. When all the meat is fried, keep it warm in the warm oven.
- Drain the remaining oil so that only a tablespoon is left. Put on the hot stove again and add the onions, peppers and pineapple, carrots and bamboo shoots. Fry everything well. Get out of the pot and keep warm.
Sauce:
- Mix all the ingredients for the sauce and put them in the saucepan. Bring to the boil and stir until a creamy sauce is formed and is clear.
- Add the meat and vegetables again and reheat.
- Prepare the Mie noodles according to the instructions on the package, pour them into a pan and season with soy sauce to taste.
- “Enjoy it” says Arnim, the new head chef.
