Sweet and sour pumpkin

Ingredients for 4 servings:

  • 1 kg pumpkin(s) (garden pumpkin)
  • 250 g sugar
  • 125 ml vinegar (apple cider vinegar)
  • 1 lemon(s), untreated
  • ½ stalk(s) cinnamon
  • 5 carnations
  • 1 cm ginger, fresh

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Very tasty with boiled beef

Peel the pumpkin, remove the seeds and white inner membrane, and cut into approximately 2 cm cubes. Combine the sugar, vinegar, 250 ml water, lemon juice, and grated lemon zest in a saucepan and bring to a boil. Add the pumpkin cubes. Add the remaining spices and simmer for 30 minutes. Then remove the ginger, cloves, and cinnamon stick and let the pumpkin cool in the sauce. Tastes great with boiled beef.
