Sweet and sour sauce

Ingredients for 1 servings:

  • 30 g fresh ginger
  • 4 garlic cloves, chopped
  • 2 tbsp wok oil
  • 1 tbsp Tomato paste, triple concentrated
  • 50 g pineapple, fresh
  • 2 tbsp honey, liquid
  • 2 tbsp soy sauce, dark
  • 4 tbsp rice vinegar
  • ½ tsp red chili flakes
  • ½ tsp potato flour
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

fruity-spicy sauce for spring rolls or fried vegetables

Peel and dice the ginger and garlic, then fry in hot oil. Add tomato paste and mix well. Deglaze with two tablespoons of soy sauce. Place the chopped pineapple, honey, and rice vinegar in a blender along with the chili flakes. Add the ginger and garlic mixture and blend until smooth. Transfer the sauce to a saucepan, mix the cornstarch with a little water until smooth, and stir into the boiling sauce. If the consistency is too thick, thin with a little water. Season again with soy sauce, rice vinegar, salt, and chili until the desired flavor is achieved.
