Sweet and spicy chili sauce

Ingredients for 1 servings:

  • 200 g chili pepper(s), fresh
  • 1 chili pepper(s) (Habanero pepper)
  • 750 g sugar
  • 750 ml white vinegar
  • 400 g sultanas
  • 8 garlic cloves
  • 3 tsp salt
  • ½ tsp ginger, roughly diced

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Roughly dice the chili peppers. Bring all ingredients to a boil and simmer until the sultanas float to the top. Purée with a hand blender, season to taste, and pour into tightly sealed jars or bottles. The sauce tastes sweet and spicy and aromatic, but by no means burns your mouth or throat. The sugar will keep for at least six months. If you can’t find habanero, it works just as well without.
