Sweet Chili Sauce Homemade

The perfect sweet chili sauce homemade à la biggi recipe with a picture and simple step-by-step instructions.

for basic ingredients

  • 100 ml Rice vinegar (which is also used for sushi)
  • 100 g Sugar
  • 50 ml Water
  • 2 Tablespoon Oyster sauce
  • 10 cl Cooking sherry
  • 5 cl Whiskey (bourbon)
  • 5 piece Garlic cloves finely chopped (Thai garlic)

for HOT

  • Chilli freshly cut into the finest cubes
  • (2 Stück mittelgross je 1 grün und rot)
  • 2 Tablespoon Agar Agar. Dry product
  • 100 ml. Mineral water

The ingredients listed

are sufficient for a processed quantity of 200 ml.

  1. Put all the ingredients listed – with the exception of the cornstarch – in a saucepan. Now bring to a boil.
  2. Reduce the heat and simmer for 15-20 minutes.
  3. Turn up the heat again and bind with the cornstarch that has been smoothed with mineral water. As soon as a thick consistency is reached, the binding is optimal.
  4. IMPORTANT !!! Ideally, the sauce should taste “sweet” first, slightly sour, not too spicy, and with a slightly salty note. If the sauce isn’t sweet enough, add a little sugar. If it is not spicy enough, add a little more chilli (grated).

  1. The sauce is now poured into a bowl and is a perfect addition to chicken, fish and seafood. The sauce is also suitable as a marinade. Simply add a few drops of soy sauce and marinate everything (fish, meat, poultry, lamb, steaks) ergo what a gourmet’s heart desires with it.

The serving

  1. I like it as a dip with finger food like chicken wings (see picture)
