Ingredients

Also:

  • 1 pinch Salt
  • 500 g Quark; any fat level possible
  • 65 g Soft wheat semolina
  • 1 tsp Baking powder
  • 75 g Sugar
  • 2 tbsp Lemon juice
  • 150 g Raisins
  • Optionally also chopped fruit, e.g. apples, apricots, cherries, berries etc ...
  • 1 tbsp Brown sugar
  • Icing sugar for dusting
  • Cooking fat

Instructions

  • Separate the eggs and beat the egg whites together with the salt in a bowl using the hand mixer on the highest setting until stiff.
  • In another bowl, mix the egg yolks, quark, semolina, baking powder, sugar and lemon juice to a smooth mass. Briefly stir in the raisins, add fruit of your choice if necessary. Finally, carefully fold in the egg whites. Pour the mixture into a greased casserole or cake tin, sprinkle with the brown sugar and bake in the preheated oven on the middle shelf at 175 degrees top / bottom heat for about 40 - 50 minutes until golden. Sprinkle with powdered sugar before serving.
  • The casserole also tastes great as a dessert. For this z. B. rich a vanilla sauce. As a dessert, the casserole is enough for about 5 people. It also looks nice when you bake the mixture in small molds (be careful, the baking time is then a bit shorter!)
