Sweet Hamburger (Macarons)
The perfect sweet hamburger (macarons) recipe with a picture and simple step-by-step instructions.
For the macarons:
- 2 Egg whites
- 90 g Almond flour – finely ground almonds
- 150 g Powdered sugar
- 20 g Granulated sugar
- 1 pinch Salt
- 1 pinch Brown food coloring
- 1 Eßl. Sesame
Fillings:
- For the “salad”:
- 50 g Green fondant – or alternatively – 1-2 lemon balm leaves
- For the meat:
- 100 g Dark chocolate
- 10 g Butter
- 30 ml Cream
- For the ketchup:
- 50 g Strawberry jam – or a slice of strawberry as a fresh variant
- 1 Teaspoon. Instant gelatin
- For the cheese:
- 80 g Mascapone
- 20 ml Cream
- 1 Teaspoon. Instant gelatin
- 1 pinch Yellow food coloring
- Alternatively, a piece of mango is also a fresh option
- For the macarons: Beat the egg white with a pinch of salt and gradually pour in the granulated sugar. Beat until the egg white draws “tips”. Mix the almond with the powdered sugar, brush through a hair sieve and pull in 2-3 portions under the egg whites. Until the mass is “like thick lava”, put in a pouch and squirt in dots on a baking paper or on a macaron mat. Sprinkle half of the bowls with the sesame seeds. And let it dry for a maximum of 30 minutes. Bake in the preheated oven (top and bottom heat) at 140 degrees for about 12-15 minutes on the middle rack
- For the “meat”: Melt the chocolate with the cream and butter – allow to cool – beat with the mixer and put in a piping bag.
- For the ketchup: Mix the jam with the instant gelatine until it has the desired consistency. Can no longer “walk”. Fill into a piping bag.
- For the cheese: Mix the macarpone with the cream – the yellow food coloring and the instant gelatine and put it in the refrigerator for a short time – then put it in a pouch
- For the “salad”. Form leaves from the green fondant or, as a fresh variant, lemon balm, there is also peppermint.
- Assemble: Sprinkle the chocolate mass on the lower part (without the sesame seeds). Place the fondat sheets on top Then add the “ketchup” and the “cheese” and then put the lid on with the sesame seeds. If you choose the fresh vaniante with the fruit – fix it with a little chocolate mixture between the layers. Important: With the fresh version (because fruit has a high water content) the macarons soften quickly – so make them fresh and eat them in the next 2-3 hours. The other variant can also be kept in the refrigerator for 2-3 days!
