Ingredients for 1 servings:

  • 450 g flour
  • ½ sachet of baking powder
  • 100 g sugar
  • 1 sachet of vanilla sugar
  • 1 bag of lemon zest
  • 200 g butter, soft
  • 250 g yogurt, Greek or diluted sour cream
  • 1 jar of jam, approx. 400 g
  • Powdered sugar for dusting

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Makes about 24 croissants, for two baking trays

Makes 24 croissants, for two baking sheets. Preheat the oven to 180°C (top/bottom heat) or 160°C (fan oven). First, put the yogurt in a bowl and gently mix with the flour and baking powder. Then add the remaining ingredients. Knead with your fingers, adding a little more flour if necessary to prevent the dough from sticking. Let it rest for a good 5 minutes. Divide the dough into two portions. On a floured surface, roll out each ball to a circle of about 30 cm. Cut each into 12 pieces like a cake and place a spoonful of jam on the wider end. Roll up from the wide end to the middle and place on a baking sheet lined with baking paper. Bake each sheet on the middle rack for about 25 minutes. While still warm, sprinkle with powdered sugar or, for plum jam, cinnamon and sugar. If desired, you can also cover them with icing.
