Sweet Latvian caraway cookies

Ingredients for 1 servings:

  • 100 g butter, room temperature
  • 225 g whole cane sugar
  • 1 egg(s), size M
  • Organic orange(s), grated peel
  • 50 g orange juice, freshly squeezed
  • 2 tsp caraway seeds, whole
  • 315 g whole wheat flour
  • ¾ tsp baking soda
  • ¼ tsp salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 24 minutes; Total time approx. 1 hour 44 minutes

Mix the flour, baking soda, and salt. Beat the butter, sugar, and egg with a hand mixer until creamy. Add the orange zest, orange juice, and caraway seeds and mix in. Add the flour mixture and knead everything into a dough. Shape the dough into a 25cm log, wrap in cling film, and refrigerate for 1 hour. If the log is still a little too soft, place it in the freezer for 1/2 hour. Line two baking sheets with baking paper or foil. Cut approximately 7mm thick slices from the log and place them on the baking sheets with some space between them. This will make about 36 cookies. Preheat the oven to 180°C/350°F and bake the cookies in the upper half of the oven for 10-12 minutes until golden brown. Let cool on a wire rack.
