Sweet omelette with quark – served in a pan

Ingredients for 2 servings:

  • 200 g quark
  • 4 eggs
  • 80 g sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Separate the eggs and beat the egg whites with the sugar until stiff peaks form. Don’t overbeat the egg whites, beat until creamy and stiff. Combine the quark with the egg yolks and fold in the egg whites. Quickly fold the first third into the mixture, then gently fold the rest into the mixture. Grease a frying pan all the way to the edges to allow the omelet to rise. Pour the quark mixture into the pan. Bake in a preheated oven at 180°C (top/bottom heat) for about 15 minutes on the middle rack. I serve the omelet with an apricot ragout. You can also add any kind of compote.
