Sweet potato and coconut meal

Ingredients for 2 servings:

  • 1 sweet potato(s)
  • 2 bananas, overripe
  • 1 can coconut milk, creamy
  • ¼ cup oat milk (oat drink)
  • 1 pinch of vanilla
  • 1 tbsp almonds, ground
  • Cinnamon
  • Desiccated coconut

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Mash the bananas, peel and chop the sweet potatoes. Cook in the milk mixture for about 15 minutes, then puree or mash with the other ingredients. Garnish with cinnamon and desiccated coconut.
