Sweet potato and minced meat casserole with feta

Ingredients for 4 servings:

  • 600 g sweet potatoes
  • 500 g minced meat, mixed
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp tomato paste
  • 2 tbsp oregano
  • 150 g feta cheese
  • 200 ml cream
  • 120 g mozzarella, grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Peel the sweet potatoes and cook in salted water for about 20 minutes until tender. Fry the ground beef in a pan. Add the onion and garlic and fry briefly. Add the tomato paste and oregano. Season with salt and pepper. Slice the sweet potatoes and place half of them in a baking dish. Add half of the ground beef and feta cheese, then layer everything again in the same way. Finally, pour the cream over the potatoes. Sprinkle with mozzarella and bake at 200°C for about 30 minutes, until the cheese is golden brown.
