Sweet potato mash à la Didi

Ingredients for 4 servings:

  • 800 g sweet potatoes
  • 1 tsp salt
  • 1 tsp white pepper
  • 2 cl vinegar
  • 100 ml milk
  • 40 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Boil the sweet potatoes for about 30-35 minutes. Then peel and mash them with 100 ml milk and 40 g butter. Season with 1 teaspoon salt, 1 teaspoon white pepper, and 2 cl vinegar. Reheat briefly and serve.
