Sweet potato mince pan

Ingredients for 4 servings:

  • 2 sweet potatoes, approx. 350 g each
  • 1 can kidney beans
  • 2 onions
  • 3 tbsp oil
  • 500 g minced meat, mixed
  • 1 can tomatoes, chopped or cherry tomatoes
  • 150 ml vegetable stock
  • e.g. tortilla chips
  • e.g. Sour Cream
  • salt and pepper
  • chili

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and wash the sweet potatoes and cut into flat pieces. Cook in boiling salted water for approx. 5 minutes, drain, refresh and drain well. Meanwhile, rinse and drain the beans. Roughly dice the onions. Fry the sweet potatoes in 2 tablespoons of hot oil in a serving pan for approx. 3 minutes, turning occasionally, and then remove from the pan. Heat 1 tablespoon of oil in the same pan and fry the minced meat until crumbly. Add the onions and fry them. Season everything with salt and pepper. Add the tomatoes, beans and stock, bring to a boil and simmer for approx. 5 minutes. Add the sweet potatoes to the pan, cook for approx. 3 minutes and season with a little chili. Serve with a dollop of sour cream and tortilla chips.
