Ingredients for 6 servings:
- 400 g sweet potatoes
- 400 g tofu (silken tofu)
- e.g. syrup (maple or agave)
- some vanilla

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
Alternative to chocolate mousse – vegan
Peel and dice the sweet potatoes, and cook until soft. Let cool. Blend the (silken) tofu in a blender until creamy. Mash the sweet potatoes with a fork, add them to the tofu, and continue blending until smooth. Add the syrup and vanilla (this can be ground or powdered, or the inside of a pod) and blend briefly again. Transfer to a bowl and refrigerate.
