Sweet Potato Pan
The perfect sweet potato pan recipe with a picture and simple step-by-step instructions.
- 1 small Broccoli
- 1 size Sweet potato
- 1 piece Ginger
- 2 Chicken breast fillet
- 4 Spring onions
- Oil
- 1 Can Coconut milk
- 1 Lemon juice
- Ground cumin
- Salt
- Pepper
- Divide the broccoli into small florets and briefly blanch in salted water – quench
- Peel the sweet potato and ginger, cut into small cubes, chop the chicken breast fillet and the spring onion.
- Heat a little oil in a pan, fry the chicken on all sides, remove from the pan.
- Now add the sweet potato with the ginger and broccoli and fry over a medium heat for about 2 minutes.
- Add coconut milk, lemon juice and cumin, simmer for another 5 minutes, season with salt and pepper.
- Now fold in the spring onions and the chicken and heat again.
