Ingredients
- 750 g Orange sweet potatoes
- 1 bunch Soup vegetables
- 1 Pc. Onion
- 1 tbsp Oil
- 0,5 tsp Ground cumin
- 1 Knife point Marjoram
- Salt and pepper
- 1,5 liter Vegetable broth
- 4 Pc. Sausages
- 0,5 bunch Parsley crispy fresh
Instructions
- Peel the potatoes, then cut them into cubes. Clean or peel, wash and dice the soup vegetables. Peel the onions and cut into rings. Heat the oil in a saucepan, fry the onion, potatoes and vegetables (except for the parsley) in it. Top up with the broth and add the spices, everything at a low temperature for about 45 minutes. Simmer, then coarsely puree the soup. Cut the sausages into bite-sized pieces and warm them up in the soup. Wash the parsley, shake dry and roughly chop. Sprinkle the sweet potato soup with parsley before serving.
