1. Take the low-fat quark out of the fridge to allow it to reach room temperature. 2. For the yeast dough, combine the spelt flour, sweet protein powder, baking powder, and salt in a bowl and mix. Make a well in the center, crumble the yeast into the well, and carefully mix the yeast with a little warm milk to form a paste. Cover the bowl with a cloth, place in a warm place, and let stand for 15 minutes. 3. Add the low-fat quark (room temperature) and knead everything into a smooth dough. Form the dough into a ball, sprinkle with a little flour, and cover again and let rise in a warm place for 2 hours. 4. In the meantime, prepare the topping: Wash the apples and cut them into thin slices. Place the light cream cheese in a small bowl and mix with the sweeteners until creamy. To sweeten the cream cheese, flavored sweeteners are best (e.g. vanilla, salted caramel, hazelnut, cinnamon, pudding flavor, etc.). Alternatively, you can simply use some pudding powder (vanilla) and sweetener. 5. Preheat the oven to 200°C (top/bottom heat). 6. Once the resting time is over, halve the dough, remove one half from the bowl, and roll it out on a floured work surface. Place the dough on a baking sheet lined with baking paper. Repeat with the second half. 7. Then top the pizzas: Spread both pizzas with the sweet cream cheese spread, arrange the apple slices on top, and sprinkle with cinnamon. 8. Bake each pizza individually in the preheated oven at 200°C (top/bottom heat) for about 12-20 minutes (depending on the oven and desired result). Tip: You can also add some chopped nuts and raisins to the pizzas before baking. It tastes delicious, too!
