Speculoos cream

Ingredients for 1 servings:

  • 75 g butter
  • 200 ml condensed milk, sweetened
  • 2 tsp honey
  • 250 g speculatius biscuits
  • ½ organic lemon(s), zest
  • 1 tsp speculatius spice
  • 2 tbsp whipped cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Great as a gift

Melt the butter over a hot water bath. Add the condensed milk and honey and stir until smooth. Purée the speculatius biscuits with a mixer until powdery. Add the lemon zest and speculatius spice and mix well. Fold the butter mixture into the biscuit mixture and whisk vigorously. Add cream a tablespoon at a time and stir until the mixture runs thickly from the spoon. Tip: It’s best to add a little less cream, as otherwise the cream quickly becomes too runny. The cream will keep in the refrigerator for at least 2–3 weeks.
