Red cabbage salad – raw vegetables with carrot and tomato

Ingredients for 4 servings:

  • ½ small head of red cabbage
  • 2 tomatoes
  • 3 carrots
  • 2 handfuls of sunflower seeds
  • 1 shot of pumpkin seed oil
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar, red or white
  • 1 tbsp, leveled sea salt
  • 1 tsp, heaped pepper from the mill
  • 1 handful of herbs (e.g. Provençal herbs or similar)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Grate the red cabbage very finely (without the stem) into the bowl. Finely chop the tomatoes and grate the carrots. Combine the remaining ingredients and stir into the raw vegetables. Let it chill in the refrigerator for about 1-2 hours. It pairs well with meat dishes or bread and butter.
