Ingredients for 3 servings:
- 1 cup rice pudding
- 2 cups milk
- 2 eggs
- 3 apples
- Cinnamon
- 50 g butter
- 60 g sugar
- some lemon juice
- Syrup (raspberry syrup)

Bring the rice and milk to a boil, add a little cinnamon, and let it swell over low heat. Stir occasionally, making sure it doesn’t boil over. Peel, core, and slice the apples. Put a little lemon juice, a pinch of sugar, and cinnamon into a bowl and add the apple slices. When the rice is cooked, remove from the heat and let cool slightly. Separate the eggs and mix the yolks with the sugar and butter. This is easiest with the whisk attachment on an electric hand mixer. Beat the egg whites until stiff peaks form. Mix the rice pudding with the egg, butter, and sugar mixture, then carefully stir in the beaten egg whites and a few apple slices. Transfer everything to a greased baking dish and arrange the remaining apple slices on top. Bake in the oven at 200°C (160°C fan-assisted oven) for half to three-quarters of an hour. Garnish with raspberry syrup and serve. Compote makes an excellent side dish.
