Sweet sandwich bread

Ingredients for 8 servings:

  • 500 g flour
  • 150 ml water
  • 150 ml milk, lukewarm
  • 75 g sugar
  • 60 g butter
  • 8 g salt
  • 10 g applesauce
  • 21 g yeast, fresh OR
  • 1 packet of dry yeast

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Dissolve the yeast in the lukewarm water and add the salt. Set the jar aside for about 30 minutes. Then combine all the remaining ingredients in a bowl, add the yeast, salt, and water, and mix everything thoroughly. (You should knead the dough vigorously for at least 5 minutes; 7-10 minutes is best.) Cover the dough and let it rest in a warm place for at least 60 minutes. (The dough will be relatively “liquid,” but this is completely normal; it will be very sticky, but that’s how it should be.) After resting, knead the dough as thoroughly as possible. Place the dough in a loaf pan or special bread pan and let it rise, covered, for another 45 minutes. After it has risen, place the pan in the preheated oven and bake at 220°C (top/bottom heat). After about 5 minutes, reduce the temperature to 180°C (350°F) and bake for about another 40 minutes. The applesauce gives the bread a special crumb and prevents it from becoming too dry. But if you don’t want to open a jar, you can leave out the applesauce. The sweet sandwich bread is very light and particularly delicious.
