Curd dumplings with berry compote

Ingredients for 4 servings:

  • 70 g fructose
  • 2 oranges, juice
  • 600 g mixed berries, frozen
  • 175 g tramezzini bread
  • 25 g semi-skimmed butter
  • 350 g low-fat curd cheese
  • 2 eggs
  • 25 g fructose
  • salt water

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Caramelize the sugar and deglaze with orange juice. Add one-third of the berries and simmer for about 10 minutes, then puree. Add the remaining berries and chill. Cut the tramezzini bread into cubes, finely chop, and mix with the butter, quark, eggs, and fructose. Bring plenty of salted water to a boil. Using tablespoons, form dumplings from the mixture, place them in the water, and let stand for 10 minutes. Remove the dumplings from the water with a slotted spoon and serve with the berry compote. Based on 4 servings, one serving contains 389 kcal.
