Sweet zucchini fritters

Ingredients for 3 servings:

  • 2 small zucchini
  • 2 large eggs
  • 60 ml buttermilk
  • 2 tbsp olive oil
  • 100 g oat flakes, fine or flour
  • 2 pinches of salt
  • 1 tsp cinnamon powder
  • 1 pinch of nutmeg
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • 2 tbsp cane sugar, if desired
  • 1 m.-sized apple, possibly
  • 20 g raisins, if desired
  • 20 g nuts, chopped, if desired
  • some butter or oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Grind 2/3 of the oats in a coffee grinder (blender), leaving the rest intact – this creates a great texture. Mix the dry ingredients together. Mix the wet ingredients as well. Now mix the dry ingredients well with the wet ingredients. Grate the zucchini and apple and add them to the batter along with the raisins and nuts. Let the batter rest briefly. Meanwhile, preheat the oven to 150°C (top/bottom heat). Heat a heavy-based pan and fry the fritters (2-3 tablespoons of the mixture per fritter) in hot oil or butter. Then place them on a greased baking sheet or a baking sheet lined with parchment paper in the preheated oven and cook for another 10 minutes. The fritters taste great topped with maple syrup and yogurt or cottage cheese. Carrots can also be used instead of zucchini.
