Swimming Pool Cake By Eny Van De Meiklokjes

- 4 Eggs
- 4 tbsp Hot water
- 40 g Liquid butter
- 100 g Sifted flour
- 120 g Sugar
- Filling
- 8 sheet White gelatin
- 400 ml Cream500
- 500 g Lowfat quark
- 250 g Quark 40%
- 2 tbsp Lemon juice
- 100 ml Milk
- 125 g Sugar
- Aside from that
- Decoration as you want it
- 4 tbsp Blue Curacao
- 2 packet Unsweetened cake topping
- 4 tbsp Sugar
- 100 ml Cream
- 1 pack Ladyfingers
- Beat the eggs with the water until frothy, slowly pour in the sugar. Add the butter and then fold in the sifted flour and place in the baking pan lined with baking paper. And now everything goes into the oven preheated to 180 degrees for about 20 minutes.
- So now we start the filling and soak the gelatin in cold water for 10 minutes. Whip the cream until stiff and mix with the remaining ingredients. Squeeze out the gelatin and dissolve it in the pan, add some of the quark mixture to the gelatin and then mix everything together.
- In the meantime, our floor has cooled down too. Now we put a cake ring around the bottom and fill in the curd mixture. Now it goes in the fridge overnight.
- The next day we cover the cake the way we want it, for me it was frogs, fish and starfish.
- Now we make the icing according to the instructions on the package and with the Blue Curacao. Now the cake goes into the fridge again for about 15 minutes, during which time we whip cream again which we then spread around the edge of the cake so that we can now put the halved ladyfingers around it. That’s it, our cake is ready and tastes fantastic.
