Ingredients for 4 servings:
- 500g tagliatelle
- salt water
- 500 g asparagus, green
- 1 cup of cream
- 100 g Parmesan, grated
- some basil, fresh
- some parsley
- possibly herbs (e.g. thyme, oregano …)
- 1 onion(s), finely diced
- 2 garlic cloves, finely chopped
- some oil, neutral (e.g. sunflower oil)
- some salt and pepper
- possibly pine nuts
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Peel the ends of the asparagus and cut into thin julienne strips. Cook the pasta in salted water until al dente. Sauté the finely diced onions and finely chopped garlic in a little neutral oil. Add the asparagus and continue sautéing. Add the pasta. Blend the cream with the herbs and Parmesan cheese and add to the pasta. Season with salt and pepper. Simmer until thickened. Tip: For a more refined flavor, you could also add toasted pine nuts.
